Chicken Schnitzel With Orange Salad

Get the kids involved if you have time to make up the chicken schnitzel as lots of fun! I have put parmentier potatoes with this, but adapt as you wish - put with chips or another carbohydrate all the family like. The mozzarella, rocket and orange salad is so refreshing too!

Serves 4
Ingredients:

Chicken Schnitzel:
2 x chicken breast (half breast per person)
Breadcrumbs (either shop bought or toast some bread and process till fine)
Plain flour for dusting
2 eggs, plus 2 tsbp water, beaten together for egg wash
Olive oil for frying

Optional:
Lemon wedges
Chopped fresh parsley and chilli flakes (to add to the breadcrumbs)

Parmentier potatoes
1-2 maris piper potatoes per person

Rocket, mozzarella and orange salad
As much rocket salad, mozzarella and orange slices you wish to use - I do a small handful of rocket, per person, a few slices of mozzarella torn up and a quarter of an orange per person.

METHOD:

1. Cube the potatoes (slice potato into 1cm approx widths and then cube it by cutting lengthways then widthways.  Drizzle olive oil over them and season and put into an oven at 200C for approx 40-45 mins.

2. Meanwhile, put a chicken breast in between greaseproof paper and bash down with a rolling pin to flatten so the thicker part resembles the thinner part. Cut in two if easier than bashing down the whole thing.

3. Season meat with salt and pepper and dredge in the flour and dip in egg wash.  Coat with breadcrumbs.

4. Heat a frying pan with a generous amount of oil (I do it so there is a thin layer covering the pan) and fry over a moderate head for 3-4 minutes on each side till crispy and golden brown.  Transfer to paper towels to drain.
