Bubble and Squeak

Great if you had a roast lunch over the weekend or leftover mashed potato. For the picky eaters who are not sure about several ingredients being mashed altogether, this might be a challenge, but hopefully the patty-shape to it will be familiar if they like burgers already! You can add other familiar components to the meal so if your child doesn’t try it, there is other food to eat. If you have time to make them together, then even better.

INGREDIENTS:

Leftover roast potato/mash
Leftover vegetables (nothing too chunky or solid i.e. green beans, peas)
1 egg
Plain flour

METHOD:

1 Mush all the leftover ingredients together with your hands plus the egg.
2 Add a little flour into the mix to make it less stodgy and firmer.
3 Shape into patties
4 Add a large glug of olive oil into a pan and put on a medium heat and cook until lightly brown on both sides

Other sides: Fried/poached egg on top, gammon or ham.
